- TASTING NOTE: "How long to age this beauty? How long is a piece of string? Each return to the glass sees something new to admire, something else to cling to and wonder at. First, it was the aromas – so aromatic with a strong cherry, floral and herbal bent – and then a palate that ceased to simply go in a straight line, but kept diverting down interesting side alleys of dark flavours, spice, herbs, cocoa, earth and balsamic. - ABOUT THE WINE: The wine is produced from a blend of whole bunches and de-stemmed, crushed grapes. Fermentation occurs naturally in large concrete tanks, with the juice left on the skins for an extended period to ensure full extraction and develop more refined tannins. Afterward, the wine is gently basket-pressed and transferred to French oak barrels, with up to 40% new oak in some cases, for ageing. The aging process takes place in the estate's underground cave, where naturally stable temperature and humidity provide ideal conditions year-round.

ABOUT THE PRODUCER: Giaconda is one of the country’s great wine producers, producing one of Australia’s greatest chardonnays. It was founded by mechanical engineer Rick Kinzbrunner in '82 and is devoted to organic viticulture and traditional winemaking such as gravity flow, wild fermentations and no filtration. Central to this philosophy is an underground cellar, dug out of solid granite, creating steady year-round temperatures that lead to prolonged and gentle fermentation. Slowly, since the ’07 vintage, Rick’s son, Nathan, has been stepping up. Nathan and Rick make all the big decisions together, like planting nebbiolo; they sat atop the La Mora hillside in Barolo in ’08 and decided there and then, planting it 2 years later. More recently they decided to reconnect with roussanne, planting it on the warmer aspects of the Giaconda Vineyard. Halliday
