- ABOUT THE WINE: The fruit was handpicked into crates before destemmed into open fermenters and inoculated. The ferments were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then pressed to Burgundian barriques for Malolactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended, fined with egg whites and bottled after 18 months maturation.

ABOUT THE PRODUCER: Forest Hill Vineyard has a unique place in the history of Western Australia’s wine industry, being the first cool climate vineyard planted in the state in 1965 as an experiment by the Western Australian Department of Agriculture. The original vineyard was planted with Riesling and Cabernet cuttings sourced from the Houghton's property in the Swan Valley. The property was purchased by the Lyons family in 1996 who embarked on a program to rejuvenate the old vineyards and plant appropriate new ones.
