- ABOUT THE WINE: Produced from 100% Grand Cru Fruit from around the village of Ambonay. Comprised of 30 to 50% of reserve wines from a period of 40 different years, aged and vinified in wood and in oak casks of 34 hectoliters. Bottled April 2021, disgorged July 2023. Dosage 5g/L.
- ABOUT THE PRODUCER: Since 1610, Champagne Paul Déthune's home and vineyards have been located in the Grand Cru village of Ambonnay. The extremely high quality of Paul Déthune Champagnes is possible thanks to very closely monitored and high-tech vinification. All of the Champagnes are vinified and aged in wood - 32hL temperature-controlled oak vats and 205L Champagne barrels that current owner Pierre aged himself. Sustainability is at the heart of the estate's ethos, with the vineyards currently undergoing organic certification. In 2014 the winery started generating its own electricity and from 2020, the winery generates 100% of the electricity it consumes thanks to the installation of new photovoltaic panels.
