- ABOUT THE WINE: The Bourgogne Hautes Côtes de Beaune red and white come from the domaine’s young agroforestry project in Nantoux. Perched at 400 metres above Pommard, Nantoux is a strikingly pretty village known for its pink limestone quarries and hiking trails between vineyards, woods and meadows. The Dancers have planted two hectares of Pinot Noir and Chardonnay and interspersed all kinds of local trees on a limestone plateau. Although not the sole reason for investing in the area, it was hoped these vines would alleviate some of the pressure brought on by the domaine's low yields in recent harvests. The mass-selection cuttings were developed with the help of Lilian Bérillon, the celebrated nurseryman who works with so many great growers. Already delivering quality, it’s clear that the wines from this site will be fascinating to follow over the years ahead.
- ABOUT THE PRODUCER: Vincent Dancer grew up in Alsace, where he inherited a love of wine and photography from his father. After studying engineering, his father suggested that Vincent spend some time in Burgundy, where his family owned some vines that were being rented out to cousins. Dancer was immediately hooked, and decided to settle in Chassagne-Montrachet and make wine from the 5.5 hectares of well-situated vineyards. The winery is small even by the standards of Burgundy, and despite Dancer’s reclusive nature, the wines are well known to a small circle of restaurateurs and wine-lovers who reliably take their miniscule allocation year after year. Dancer’s work in the vineyards can only be described as meticulous. In 2012, he became first producer in Chassagne-Montrachet to receive organic certification, and although the practice is more common today, he’s still one of just a few. Now working with his son, Theo, he is now farming many of his parcels biodynamically and is using horse to cultivate all his 1er cru vineyards. In the cellar, Dancer’s work is the definition of artisanal, with all the qualities that his entails at a top Burgundian estate. All fermentations are done with native yeasts, malolactic fermentation occurs naturally, and there is no batonnage, fining, or filtering of the wines. It is worth noting that there has been no new oak purchased at the Domaine since 2019 and more and more 350- and 600-litre casks are being used as Dancer seeks to further reduced the oak impact on his wines.
